The rose-cardamom honey infusion is inspired by Persian Love Cake - a lovely cake of rosewater, cardamom, lemon zest and pistachios.
The folklore behind this cake is that a Persian woman fell in love with a prince. She baked the prince a “Love Cake” to enchant him to fall in love with her, each bite having magical love powers. What’s true is that all the work grinding the spices for this cake is a labor of love, and the honey was no different! We began steeping rose petals and cardamom in this honey for many moons - and the floral and spice notes have finally come through. It’s quite lovely and it may have magical powers!
What to do with this honey? The first inclination is to use in beverages: gin cocktails, lemonade, tea, and especially lattes. But it could also add a sophisticated touch to yogurt, ice cream, shortbread cookies and the like. Divine!
